This cold soup is refreshing and hydrating. Cucumbers rehydrate your body and the kefir adds energizing B vitamins to revitalize you for the afternoon. Kefir and yogurt are full of good bacteria, they just have different strains, so they complement each other. If you haven't tried Gazpacho yet, you are in for a treat. This is the fun way of getting your probiotics into your day.
What You Need:
1 cup yogurt, plain full-fat
1 clove garlic, minced
1 tablespoon fresh dill
Juice of 1 lemon (about 2 tablespoons)
Sea salt, pepper
1 cup kefir
Tomato juice or V-8 juice (optional)
Peel the cucumbers. Cut them lengthwise and spoon out the seeds and discard. Cut the cucumber in small chunks and put in the blender. Blend until smooth.
Add the yogurt, garlic, dill and lemon juice and blend until smooth.
Now add sea salt and pepper to taste. Stir in the kefir until creamy. If you like, swirl in the tomato juice or V-8 juice to taste, or if others don't like the tomato in their gazpacho, then just add it in the individual cups. Chill the soup in the refrigerator for a few hours.
This is good for leftovers for a few days. So if you don't have time to make lunch, make this the day before and it will be ready waiting for you. It will keep you cool, hydrated and alert the rest of the day!
